George Elliott was a highly serviceable all round footballer, the highlight of whose league career was captaining University in 1911 and 1912. Originally from Ballarat College, he played his first game of VFL football in 1905, with Fitzroy. This also proved to be Elliott's only appearance with the Maroons.

He did not resume in league football until 1908, when he was a member of University's inaugural VFL sides. Most commonly used in the backlines, George Elliott could also do a useful job as a follower when needed. He played a total of 79 VFL games for the Students, kicking three goals. George Elliott, the brother of the A.I.F General Harold 'Pompey' Elliot, later lost his life whilst on active service during World War I.
